In Chinese, Oolong means “Black Dragon”, a name inspired by an ancient legend in which a tea grower witnessed a black dragon emerging from a tea plant. Organic Shui Xian Oolong is crafted through a complex and carefully controlled process that gives this tea its distinctive character.

The leaves are first withered under the sun and then gently shaken to bruise their edges, encouraging a controlled oxidation process. Oxidation is then intentionally halted through heat, creating what is traditionally described as a partially oxidised tea — positioned between green tea and black tea.

The result is an elegant and balanced infusion with a smooth, rounded character, delicate floral and vegetal nuances, and a refined aromatic profile without pronounced bitterness.
